This cool, easy recipe is great for the kids (or the kid in you).
The days are getting hotter, and the mornings of eggs and oatmeal are due for a refreshing change. But instead of reaching for the cereal box, grab a frozen yogurt pop! They’re healthy, easy to make, convenient for a busy morning, and every bit as delicious.
Here’s how to make ‘em:
-2 cups of Plain Greek yogurt
-2 Tbsp honey
-2 Tbsp chia seeds
-1 tsp vanilla extract
-1/2 cup fresh berries (blueberries or raspberries work great)
-1/2 cup of granola (homemade or store bought)
-Popsicle mold and sticks
1. Start with the ‘Gurt
Using Greek yogurt will ensure your pops have a thicker, creamier consistency once frozen. Plus, Greek yogurt has more protein per serving than regular yogurt, making the pops both healthy and satiating. Use plain instead of a flavored version to control the amount of sugar. Stir in honey, chia seeds, and vanilla extract until well blended.
2. Berry Blast
Mix in some berries! Berries pack some antioxidant power into every bite, as well as some fiber, and vitamins. If needed, cut them in halves. Any berry can work, or you can go tropical with some cubes of mango!
3. Go Granola
Pour the mixture into the popsicle molds, and then sprinkle the granola on top. Pro tip: Warm some extra honey in the microwave or on a small pan and drizzle over the granola, which will help it stick to the frozen yogurt when you take it out of the molds.
Stick a popsicle stick in the middle and put the molds in the freezer overnight. Now you’ll have a special to-go treat in the morning! Take them to the pool, to summer camp, or to the office. Enjoy!
