Broiled Pineapple Dessert

-1 ripe pineapple, cut into ¼, with skin
-½ cup brown sugar
-½ cup coconut shavings
-vanilla ice cream (to serve)
Move the oven rack about 6 inches from the top broiler.
Set the oven to broil.
Cut off the top and bottom of the pineapple, and then cut the whole pineapple into ¼ sections, with the skin still on.
Cut the core from the sections, and slice the fruit into sections while keeping it on the skin.
Place on a baking sheet and sprinkle with brown sugar and coconut shavings.
Broil in the oven for about 5-8 minutes, until the coconut is toasted.
Serve the ¼ sections on a plate with a scoop of vanilla ice cream. Enjoy!
