Grilled Pineapple Recipe
Get that grill fired up! It may be one of the last days you can use it… Autumn is coming! This simple summer stunner is a great side dish to some BBQ, and deserves a place at every picnic table along with the corn-on-the-cob and potato salad. And with this recipe, you’re sure to be the talk of the party:
-Pineapple, cored and cut into wedges
-¼ cup of honey
-Fresh lime, to squeeze on top
-Vegetable oil, for the grill
Brush or spray the grill with vegetable oil. While the grill is heating up, stick the pineapple wedges on kabob skewers, leaving some space at the end to hold them.
Place the pineapple sticks on a plate and drizzle with honey.
Grill evenly until marked all over.
Take the sticks off the grill and squeeze fresh lime over the pineapple and let it rest for a minute.
Chop fresh mint leaves and garnish on top before serving.
