Healthy Avocado Dark Chocolate Truffles
This recipe may seem completely strange, and we know you may be asking yourself how in the world avocado fits into a chocolate truffle recipe, but TRUST US - this dessert is the bomb! There are a number of reasons this recipe is healthy, but we’ll start off with our green dose of healthy fats, the avocado. Avocados have been touted as a “healthy source of fats” because they contain monounsaturated fats, which actually help lower “bad” cholesterol. And, in case you didn’t know, avocados are a wonderful source of fiber! Yes, it’s true. Just ½ of an avocado contains about 6.5g of fiber, equivalent to about 25% of your daily goal. As far as the dark chocolate goes, it has been a proven source of antioxidants, iron, magnesium, copper, and also contains about 12% of your daily recommended fiber intake. Just make sure you choose dark chocolate with 75% or more of cacao (the bean chocolate comes from). What are you waiting for? Grab your mixing bowl!
6-10oz of dark chocolate chips or bar, chopped (75% cacao or more)
1tsp of vanilla extract
Pinch of salt
2-3 Tbsp of unsweetened cacao powder (for rolling)
1 ripe avocado, mashed
In a small pot, throw in the dark chocolate pieces and a pinch of salt on medium-low heat. Stir constantly until melted. Careful not to burn it!
Pour the chocolate into a mixing bowl with the mashed avocado. Add the vanilla extract and mix well until combined.
Sprinkle the cacao powder on the counter.
Take a small spoonful of the mixture and roll it between your palms until it forms a ball. Then gently roll the ball around the cacao until covered on all sides.
Place the balls on a plate and refrigerate for about 30 minutes, or until slightly firm.
