Israeli Salad Recipe
Now that it’s officially summer, bring on the barbecue! The sun is out, the grill is hot, and the water is beckoning you to take a dip. But whether you’re planning a get-together, or planning on attending one, you need to bring a dish to share! This refreshing Israeli Salad is a great addition to any picnic table. Just make sure to bring a big bowl of it!
-2 heirloom tomatoes
-1 red onion
-1 red bell pepper
-1 bunch of parsley
-½ cup of fresh squeezed lemon juice
-¼ cup of olive oil
-salt & pepper to taste
Chop up the cucumbers into small cubes, as evenly as possible. Repeat with the red onion, tomatoes, and bell pepper.
Chop the parsley, discarding any long stems.
Whisk together the lemon juice and olive oil.
Toss all the vegetables and parsley with the lemon juice and olive oil mixture. Sprinkle in salt and pepper to taste, and mix again.
Serve fresh and enjoy!
