Here is a recipe for a perfect healthy brunch. Pinto bean and tomato ragout on ''BOOST'' infused white rice!
- 14oz can of pinto beans (or any beans you have handy!)
- 14oz can of diced tomatoes
- One large carrot
- One stick of celery (with it's leaves)
- One Small Onion
- Two cloves of garlic
- Salt & Pepper
- 1/2 tbsp Oil
- One cup of minute rice
Infuse water with BOOST tea prior to cooking this meal. Heat 1 tbsp of BOOST tea for each 1 cup of water. Heat up until almost boiling, let to sit for five minutes and strain any loose leaves. Set aside.
Chop the onion and garlic. In a large sauce pan, heat up the oil and sautée the Onion and garlic for about two minutes. During that time, chop the carrot and celery stick as finely as possible (the finer the chop, the faster they cook!). Add to the pan and sautée for an additional five minutes or until the carrot pieces are solid but chewable!
Rinse pinto beans and add to the pan, add tomatoes, turn heat down and season to your liking. Let the liquids reduce and the taste evolve for ten minutes on low heat.
At this point, feel free to add any fresh herbs that you may have lying around, some nutritional yeast or even some wine if you're feeling risky.
During that time, make a cup of rice following the manufacturer's instructions, replace the amount of water needed by your infused BOOST water!
Finish the recipe by adding the ragout to your rice and freshening it up with the celery leaves!
